Eating Green Challenge Re ection Essav After a week well almost a week if you ignore the Whole Foods field trip lunch of excluding meat from my diet I was pleasantly shocked to realize that I actually felt healthier within such a short period of time Since I wasn t eating any meat I instead turned to eating more legumes in order to satisfy my protein intake specifically lentils and beans I also included more vegetables in my meals than I would have normally included along with more mushrooms Oddly enough I managed to cut back on eating junk food snacks like potato chips since I was feeling fuller more quickly with the meals I ate I didn t realize until I had to write this re ection essay that by trying to eat legumes in order to replace meat that I was really eating healthier overall Usually I would typically eat some sort of meat such as chicken for dinner and some side dish would usually be rice I continued to eat rice but I also varied my meals more so I had to be creative to fill the gap that meat creates with something both appetizing and healthy I knew when I started the challenge that I didn t want to go through the meatfree challenge by simply eating junk food or eating whatever was easiest to make or have access to It inspired me enough to actually look up recipes on the Internet and try to cook with my mother and try to expand my tastes I realized I was eating better and even from every food group despite not eating meet For me the hardest part of the challenge was trying to stick through it and to be adventurous enough to try meals I hadn t tasted before I usually stick to a routine when it comes to food and this week I shook things up a bit
