Normal water contains dissolved gases like oxygen(O2), carbon dioxide(CO2) in it. If the reactants or products are oxygen-sensitive, then the reaction may be disturbed due to the presence of the dissolved oxygen in water.

On boiling, the dissolved gases in water are expelled out. If the boiled water is then cooled, without exposing to the atmosphere, the water becomes free of dissolved oxygen.

Therefore, laboratory procedures involving oxygen-sensitive reactants or products call for using pre boiled and then cooled water.
